INGREDIENTES
A marinade for meats and vegetables.
10 garlic cloves,
peeled
1 teaspoon salt
1 cup sour orange juice or a 50/50 mixture of sweet orange juice and lime juice.
1 cup vegetable oil
1. Mash the
garlic and salt into a paste. ( A mortar and pestle works best, but you may
mince the garlic finely with a knife or put it through a garlic press and mash
the seasonings in with a fork). Stir in the orange juice.
2. In a saucepan, heat the oil just to the boiling point and remove it from
the heat. Whisk in the orange juice mixture until well blended.
3. Use right away; homemade mojo criollo does not keep well.
